We had these pancakes for Easter brunch, thanks to my sister Charity who whipped them up, and you’d have thought the whole family had died and gone to Heaven with how much they raved about them.

They were so good that Dave proclaimed that this should be our new Christmas morning breakfast (we are always trying to figure out the “perfect” Christmas morning meal, and each year we experiment with something different).  
These pancakes are adapted from this recipe HERE which has some awesome pictures and other recipes I want to try.
So here you go…this is how Charity did it:
2 c. whole wheat flour
2 tbs. sugar
2 tsp baking powder
1 tsp. baking soda
1/2 tsp. salt
2 1/2 c. buttermilk (the original recipe calls for 2 c. but they were way too thick…maybe start with 2 and add a little more to your own personal preference)
2 eggs
1/4 c. coconut oil  (I have a weakness for any type of coconut so writing that made my mouth water a little bit…)
1 tsp. vanilla extract
3/4 c. flaked coconut (original recipe calls for 1/2 but boy howdy do we ever love coconut!)
1 c. coconut granola (we found some at Walmart)
Mix dry and wet ingredients in different bowls and then mix together.  Don’t over mix.  Batter will be lumpy and that is A-OK.
I like to think that one of the reasons my family scarfed this down so quick was because we served it with buttermilk syrup I whipped up 🙂  Ha!  But I do love buttermilk syrup.  Who wouldn’t with all that sugar and butter??  Just for those special occasions… The recipe for that is HERE. (we actually usually use a different recipe but I couldn’t find it with the move and they all taste pretty much the same if you ask me).
We also whipped up some savory eggs to go with them…slow cooked scrambled with cheese, tomatoes, bacon and avocados…yum.

  1. Sounds divine. I'm sure Charity is a great cook! I'm sure she wants to "find someone" – but it seems like every time your family or your parents talk about Charity there's that elephant in the room that she's single. Single is ok, in fact single is GREAT! Men can sense desperation and it will cause them to run really fast in the other direction. It always happens that when you stop making an issue out of looking and just chill about it, your "someone" finds you.

  2. Those sound awesome…and I have never posted on here but IF you like gingerbread…then you HAVE to try this with your buttermilk syrup. It is the taste of Christmas. Just sayin.

    Gingerbread Waffles

    Ingredients
    ½-2/3c brown sugar (depending on how sweet you want them)
    2 eggs, yolks and whites separated
    1½c buttermilk (or regular milk + 1½Tbsp vinegar)
    ½c molasses
    6 Tbsp butter, melted
    2c flour
    3tsp baking powder
    1tsp baking soda
    2tsp ginger
    1½tsp cinnamon
    ½tsp salt
    ¼tsp cloves
    ¼tsp nutmeg
    ¼tsp cardamom (optional, but recommended)
    Instructions
    In a small bowl, mix brown sugar and egg yolks until creamy. Stir in buttermilk, molasses, and butter.
    Into a large bowl, sift together flour, baking powder, baking soda, ginger, cinnamon, salt, cloves, nutmeg, and cardamom.
    In a glass or metal bowl, whip egg whites with an electric mixer until stiff peaks have formed.
    Add liquid mixture into sifted dry ingredients and stir together. Fold in egg whites.
    Cook according to waffle-iron instructions.
    (In my waffle iron, using ⅓c scoops, I made 16 waffles)
    Notes
    For pancakes: use the same ingredients, just don’t separate your eggs or whip your egg whites.

  3. Ahhhh…love your sister's blog. Your family is great!! I'm from a family of 7 kids…I'm the only one not married. My family is always looking and maybe worried.Haha… Charity is going to find someone great…she seems like quite an awesome person.

  4. We are definitely not worried about Char…she is awesome and will find someone great. She just figures it's great to use social media to her advantage. Sorry if I made that sound like desperation, whoops!…none of us are desperate and she's awesome single. Social media is just sometimes awesome for hooking people up though! 🙂

Since she requires a LDS man in good standing who had completed his mission and hasn't yet married she might want to consider moving to a place with a larger pond of choices of men to fill that roll. Aren't there some online LDS match sites? It is unfortunate you are all across the country. But how can she meet and get to know anyone if she isn't home? She is in a tough stage of life, waiting for the next stage of life. And outnumbered by so many in the family living the life she thinks she wants.

    just a note to say – i am really happy with my challenging and beautiful life, and am fully embracing many wonderful aspects of my singlehood. i also believe passionately in marriage, and feel deeply that i should be actively pursuing the opportunity to marry and become a mother. i promise i'm not shooting off laser beams of desperation or cluelessly swimming in a much too small pond in the process 🙂 i am finding joy and learning and beauty in this stage of life, and working to become a better and fuller person.
