Oh man I’m so mad I didn’t snap a picture of these scrumptious things my kids scarfed down before they left for school this morning.  But even without a picture and even though Thursday is almost over in the states (I try to do Thursday recipes which I’ve kind of failed at the last few weeks…) I feel it is my duty to share delicious recipes (ha!)…especially when they involve pumpkin in the fall.

Plus, whenever I have a hankering for pumpkin pancakes I want to be able to pull this baby up on the blog (it is from “allrecipes.com” and was posted by a very good cook named Ruth…thank you Ruth!).
So here you go:

Mix wet ingredients:
1 1/2 c. milk
1 c. pumpkin puree
1 egg
2 Tbs. vegetable oil
2 Tbs. vinegar

Mix dry ingredients separately:
2 c. all-purpose flour
3 Tbs. brown sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. allspice (we don’t have that here so I added a touch of nutmeg)
1 tsp. cinnamon (I heaped my teaspoon up a little on this one)
1/2 tsp. ground ginger
1/2 tsp. salt

Then mix the wet and dry together and cook on a lightly oiled griddle or frying pan.

This would be extra good with buttermilk syrup.

Mmmmmm.
