lentil tacos

I’m getting ready to post about our Eyre reunion. For anyone who has read about past reunions (you can see them if you click on “deliberate mothering,” then “having a plan,” then at the bottom you’ll see “Eyrealm Reunions”), you know we take food very seriously up there at the lake. My sisters (sisters-in-law included) are all such good cooks!

So until I can get to posting all that reunion stuff, let’s talk about one of the meals we had there that I fell in love with: lentil tacos.

It’s my sister Charity‘s recipe and guys, it is SO good. I have always loved lentils, but have never made them myself. I don’t know, it just always seemed kind of ominous to me. But it’s so easy and lentils are so good for you, you know:)

Let’s get a closer look at that beauty:

Ok, here’s what you need:

1 small onion, finely chopped

2 cloves garlic

2/3 c. dried lentils (any color)

1 Tbs. taco seasoning (my sister makes her own because she’s fancy like that, I just use store-bought but maybe I’ll step it up and make my own some time too!)

1 2/3 c. chicken broth

2 sweet potatoes

2/3 c. salsa

tortillas

For the toppings:

1 c. cherry tomatoes

1/2 c. chopped cilantro

lime juice and honey (to taste)

1 avocado

Feta cheese

arugula (or other mixed greens, but if you really want your tacos to be amazing, use arugula 🙂

Saute the onion and garlic in a pot with a little oil for a little bit until softened (about five minutes). Then add the dried lentils and taco seasoning, stir together for a minute and then add the chicken broth.

Bring this mixture to a boil, then cover and turn down the heat and let simmer for 20-25 minutes.

Meanwhile, chop up the sweet potatoes into bite-size pieces, coat them with a little bit of olive oil and 2 tsp. more taco seasoning. Roast in the oven at 400 for about twenty minutes (until they’re slightly browned). This is my favorite part of these tacos…don’t skip out on these!

Dice up the cherry tomatoes and mix them up with the cilantro, some lime juice and a drizzle of honey. Then chop up everything else so people can top their tacos with whatever they like most.

When the lentils are done, mix in the salsa, and then they’re ready to use for your base.

And there you have it: all the fixings to make these:

Have your family or guests make their own and wig out at how delicious they are.

I’m glad you shared this shawni! Definitely one of our biggest family favourites, and I’m pretty proud of myself that I basically made it up (I got the lentils recipe from someone else, but all of the other things are my additions)! I highly recommend making your own taco seasoning. Take a look at the ingredients on the back of a package of a premade taco seasoning and you will probably agree. It’s super easy and I do it in big batches. I just googled taco seasoning recipe and use the first one that came up.

Also, I wanted to comment that the men in our family are really good cooks too! I have always appreciated how our brothers have embraced the role of cook in their families.

Hmmm, I think probably 4-6 servings depending on how big you make the tacos!

Looks yummy! It had never occurred to me to make my own taco seasoning. It was on my grocery list this week, but after reading this post, I googled a recipe. Wouldn’t you know it – I already had all of the spices needed for the recipe in my pantry! Can’t wait to try this out. Thanks!

No, shouldn’t be any liquid left, but if there is a little, just drain it.
