This is the time of year when I am in love with everything pumpkin. So when I came across this recipe on r2sense last year (I think they just posted again too…and it looks like the recipe is originally from weight watchers), I decided I better give them a try. First of all because I’m all about easy, and second because really? You only need these three ingredients?

It was one of those have-to-try-it-to-believe it deals.

But guess what? It totally works. Just mix up one box of spice cake mix, one small can of pumpkin (15 oz.) and mix in 1 c. of mini chocolate chips (you can use regular too but I like how the mini ones spread out the chocolate a little better on these guys), and there you have it: delicious dough to cook up into pumpkin cookies.

Bake at 350 degrees for ten minutes.

  1. I actually made these just today for my daughter to take as her seminary treat tomorrow. I prefer to make them as mini muffins and cook them for 13 minutes. I add 1/8 cup water and 1/8 cup oil to make the batter a little smoother. They are a favorite around our house too.

  2. I make these the same way but add butterscotch chips to bring a variety to these. I look forward to fall time every year because of it!
