a quick weeknight salad “recipe”

Every now and again my friend and I go to Costco together.

Sometimes it is the only time in our days that we can figure out to catch up. So we talk through the world as we peruse the isles of milk and bread and the latest Costco specialties.

I like new ideas for dinner and this particular friend has some great ones.

Last week she gave me a great idea that I am loving so I’m here to share. Get ready, because it’s super easy:

Buy a rotisserie chicken and a mediterranean salad mix.

Add peppers, cucumber, avocado and voila! You have a pretty artisan-looking salad ready for dinner:
