Chicken Tikka Masala

This recipe for chicken tikka masala is another recipe from my sister-in-law Julie.

Being an Indian food fan, I was head-over-heels in love when she made it for us. We’ve incorporated “India Night” into our “International Nights” and recipe has fit the bill quite beautifully.

Ingredients Needed to Make This Delicious Dish

For the marinade:

1 cup plain yogurt
1 tablespoon lemon juice
2 tsp. ground cumin
1 tsp. ground cinnamon
2 tsp. cayenne pepper
2 tsp. black pepper
1 Tbs. minced fresh ginger (or ground ginger: 2 tsp.)
1 tsp. salt
3 boneless, skinless chicken breasts

Then for the sauce:

1 Tbs. butter
1 clove garlic, minced
1 jalapeno pepper, finely chopped
2 tsp. ground cumin
2 tsp. paprika
1/2 tsp. salt
1 8-oz can tomato sauce
1 cup heavy cream
1/4 c. chopped cilantro

Chicken Tikka Masala

Ingredients
  

The Marinade
  • 1 c. plain yogurt
  • 1 Tbs. lemon juice
  • 2 tsp. ground cumin
  • 1 tsp. ground cinnamon
  • 2 tsp. cayenne pepper
  • 2 tsp. black pepper
  • 1 Tbs. minced fresh ginger or 2 tsp. ground ginger
  • 1 tsp. salt
  • 3 boneless, skinless chicken breasts
The Sauce
  • 1 Tbs. butter
  • 1 clove garlic, minced
  • 1 jalapeno pepper, finely chopped
  • 2 tsp. ground cumin
  • 2 tsp. paprika
  • 1/2 tsp. salt
  • 1 8-oz. can tomato sauce
  • 1 c. heavy cream
  • 1/4 c. chopped cilantro

Method
 

  1. Combine all marinade ingredients. Then pour over chicken and marinate for at least an hour. Even better if overnight.

  2. Grill or cook the chicken and discard marinade.
  3. Melt the butter in a large skillet over medium heat.
  4. Saute garlic and jalapeno for one minute. If you would like, have the extra children over at your house during dinner prep-time have a jalapeno-eating-contest while you work. Makes cooking fun.

  5. Season with the cumin, paprika and salt.
  6. Stir in tomato sauce and cream.
  7. Simmer on low until the sauce thickens. This should take approximately 20 minutes.

  8. Chop up the grilled chicken and add to the mix. Simmer for ten minutes more.
  9. Garnish with fresh, chopped cilantro and a little plain yogurt or sour cream.
  10. Serve over hot rice.

  1. Is the bread you served with it Roti/Chapati, or it it a tortilla? The whole meal looks delightful. Do you think you can substitute something else for the cream? I wish I could eat it, but even a little bit doesn't agree with me. I can drink whole milk, maybe that will work?

    For Susan R: I sometimes substitute canned coconut milk in place of cream in recipes like thisand it seems to work fine.
