Easy Protein Bowls: Our Favorite Quick and Healthy Dinner

Meals are different when we have just the two of us at home. Oh there are so many moving parts in life as empty nesters, and we are in and out all the time. But when we’re home we like to eat at home. And we have found a new favorite that’s so easy to put together on a whim. It’s also really good as leftovers so we’ll take that!

Of course, this would be a great meal for a whole family too. And each person can cater to what they want in these bowls. So I figured it would not be very nice of me to not share this good, protein-packed and nutrition-rich meal.

The great thing about this is that you can use all kinds of different ingredients. I’m going to share what our favorite is lately, but there are so many variations you could use!

Why We Love This Protein Bowl

  • Ready in under 20 minutes — even faster if you grab pre-grilled chicken from Trader Joe’s (although I do like the ground beef the best for some reason on this one)
  • High in protein so it actually keeps you full
  • Great for two people or scales up so easy-peasy for a whole family
  • Works so perfectly as leftovers the next day (makes me so happy to have delicious leftovers waiting for me)
  • That drizzle of hot honey wraps it all up SO tasty!

Variations to Try

The beauty of a bowl meal is that it’s endlessly customizable. Here are some of our favorite swaps:

  • Swap arugula for spinach, kale, or mixed greens
  • Add a base of quinoa or brown rice to make it into an even more full meal
  • Try roasted zucchini, bell peppers, or broccoli instead of (or in addition to!) sweet potato
  • You can add nuts for even more protein and crunch…chopped raw almonds or roasted pepitas (pumpkin seeds) would be tasty
  • Add feta cheese or sliced avocado for extra richness (actually, make sure to use avocado!)
  • Use a drizzle of tahini or balsamic glaze instead of hot honey

I’ll have to take a more “professional” photo next time I whip this up, but this gives you an idea of what this tasty bowl looks like.

This isn’t really a “recipe,” more a suggestion for all the good things you can throw into a bowl and whip up deliciousness.

(I use hot honey on any home-made pizza as well as for my favorite flat bread with ricotta. So good!)

So here’s how to whip up these easy protein bowls!

Protein Bowls

Ingredients
  

  • ground hamburger, turkey or grilled chicken Did you know they have grilled chicken all ready to go at Trader Joes? SO easy!
  • cottage cheese
  • roasted sweet potatoes chopped small, seasoned with olive oil, salt, pepper, paprika, chili powder (or however you like to prepare your roasted veggies)
  • arugula
  • cucumbers chopped into bite-size pieces
  • avocado chopped in bite-size pieces
  • hot honey to drizzle

Method
 

  1. These are just suggested ingredients. You could add so many different roasted veggies and/or greens to these bowls (see suggestions above). The only thing I think I'd be sure to start with is some kind of protein/meat as well as cottage cheese. Then add whatever other ingredients you have in the fridge.
    What makes this dish incredible is the hot honey. You can get it at any grocery store (my fav. is at Trader Joes). I am a huge fan of hot honey!!
    Enjoy the fact that you just whipped up some deliciousness that is not only easy, but also will grow your muscles and bones with all that protein!
