Making eggs Benedict on Christmas morning has become a must in our family. But it’s taken a while.

This is an Eyre family tradition through and through. My mom, with NINE kids vying for her attention on Christmas morning, somehow made Christmas miracles. She got the Christmas morning table all set with china and our traditional pre-cut grapefruit appetizer. Then she served us all eggs Benedict. We all ate that stuff up.

When Dave and I first started our little family we tried for a few years to make eggs Benedict our own Christmas morning tradition. Because you don’t cut out on a good tradition like that without really giving it a good go. But our little kids didn’t appreciate that tasty dish equal to the work they took, so we tried our own things.

Then my mom happened to be in town for Christmas one year. True to my mom form, she effortless pumped those babies out for us.

And once they touched my kids’ lips they were in, hook, line and sinker. You see, by then they were all old enough to appreciate a delectable breakfast.

And enjoy they did. So much so, with stars in their eyes at that deliciousness, there was no choice but to incorporate this tradition back in our family.

My mother-in-law has become a pretty great pro at helping with Eggs Benedict and I love her for that:

I’ve had questions every year to share our eggs Benedict recipe so I figured it should really be shared. Unfortunately I don’t have great pictures to go with this recipe. Some day when I do, be assured that they’ll show up here!

For now, here’s the recipe:

Eggs Benedict

Our favorite Christmas (and now Easter too) breakfast
Course Breakfast

Ingredients
  

  • 12 large eggs (to poach)
  • 12 English muffins
  • 12 slices Canadian bacon
  • 9 large eggs (for sauce)
  • 3 Tbs lemon juice
  • 1 1/2 C. butter

Instructions
 

  • Turn on oven to 350 degrees.
  • Spray a muffin tin generously with cooking spray and add 1 tsp. water to each cup.
  • Crack one egg into each cup.
  • Sprinkle with salt.
  • Bake in oven for approximately 10 minutes.
  • Meanwhile, have people in your family assigned to specific jobs:
    One person should toast the English muffins
    One should warm the Canadian bacon
    One should arrange the English muffins topped with Canadian bacon on the serving plates.

Make the Hollandaise sauce:

  • In blender, add 9 egg yolks, 3 Tbs. fresh lemon juice. Turn blender on and off.
  • Heat butter until very hot but not quite boiling.
  • Turn blender on "high" and very gradually add the butter until thick and fluffy (about 30 seconds).

Serve the Eggs Benedict

  • Add a cooked egg to each of the English muffin/Canadian bacon on the plates.
  • Pour on Hollandaise sauce immediately before serving.
  • Enjoy the most delicious breakfast.

Notes

This recipe is a little fussy. It may be something you’ll want to practice before Christmas. It is all pretty easy stuff, but the timing is a little tricky to get it all hot at the same time. It really helps to have good partners in the kitchen to get it all put together. But isn’t cooking together in the kitchen just about the best thing ever??

    I am a new follower. I stumbled upon your blog from Sarah of Clover Lane recently. I was a long time reader of hers. As a mom of four (ages 8, 5, 3, and 1) I feel like I am just in the beginnings of this life with lots of kids. Adjusting to three and then four kids has been a lot and I am very much still trying to figure it all out! I have been rereading some of Sarah’s old posts for encouragement. And silly enough, I was looking for another mom of many to follow since she has sadly passed. To glean from their wisdom a few steps ahead. And so as I have just started reading your blog a few weeks ago, I have so enjoyed reading about your family and “getting to know you” a bit! There is something so encouraging about seeing other large families and reading about their everyday lives. It is hope and inspiration in these still early days of parenting for me.
