Mediterranean Bowls: An Easy, Healthy Crowd Pleaser

When the kids came home for Memorial Day I put each kid in charge of a meal. When it was Max and Abby’s turn they whipped up all the fixings for Mediterranean-inspired bowls.

And we devoured them. They were SO GOOD!

Not only were they delicious, but they were super healthy and filling too. A complete meal in one bowl that everyone could customize to their own liking.

That’s a big win in my book.

Ok, and they don’t actually have olives and chickpeas and some of the other Mediterranean things you may expect. But you can add or take away anything you want from this recipe!

These bowls are beautiful too. Don’t you just love when food is beautiful?

I had to take a photo of all the “pieces” of the bowl because I thought they looked so beautiful on my cutting board with the cool sun spilling through the window.

Dave, as you can tell here, is as in love with these things as I am. And he was expressing the “well done” sentiment hanging on the wall:)

Even Lucy likes them…although I didn’t get a “well done” photo of her excitement.

Ok and let’s look at that food beauty with a little sun on it as well:

Mediterranean-Inspired Bowls

Course: Main Course

Ingredients
  

  • Arugula
  • Flakey salt
  • Olive oil
  • Cherry tomatoes chopped into bite-size pieces
  • Red onion chopped small
  • Fresh mozzarella chopped into bite-size pieces
  • Avocado chopped into bite-size pieces
  • Cucumbers chopped into bite-size pieces
  • Basil chopped small
  • Grilled chicken we use my favorite marinate and grill, but you can use ANY kind of chicken, or go without!
  • Balsamic glaze from Trader Joe’s the one from Trader Joe's is the BEST
  • Fresh bread any kind that you love as a side
  • Hummus to mix into the bowl or spread on the bread

Method
 

  1. Chop up and prepare all ingredients.
  2. Place each one in a separate bowl for people to dish from, or just leave on a cutting board in pretty light:)
  3. Have everyone dish up whatever they'd like and drizzle balsamic glaze over all that goodness.
  4. Enjoy that healthy meal you can keep making from the leftovers on repeat, because it's so good and easy, you'll want to keep coming back!

Notes

The favorite marinate I mentioned above is from Modern Honey. It’s SO GOOD!
