These two soups have been family favorites for years and years.  My kids eyes sparkle when I tell them we’re having one of them for dinner.  And I really think they are pretty healthy too.

Taco Soup

Brown 1 lb. of ground beef with onion and seasonings.

2-3 c. water
1 large can crushed tomatoes
a couple cans of light red kidney beans (un-drained)
a couple cans of dark red kidney beans (un-drained)
1 pkg+ taco seasoning2012-12-10 fall 65782
Let simmer for 5-10 minutes.

Add 1 c. corn and heat until steamy.

Serve with sour cream, shredded cheese and Fritos (unless you want to be more healthy, then leave those out).2012-12-11 winter 65991

Crockpot White Bean Chicken Chili

Cook on low setting until chicken is cooked through.

If I put this on low for two hours (with the small tenderloins) it’s done in mine, but every crock pot cooks a little differently.

Shred the chicken with two forks.

2-3 cans white kidney beans (un-drained)
1 c. whole kernel corn
1 tsp. cumin
Leave in crock pot until warmed through.

Serve with shredded cheese, sour cream and tortilla strips if desired.2012-12-15 holiday stuff 66506
So easy-peasy.

I think I’ll make one of these for tonight…

On another food note, a very kind blog reader sent me these when she found out I was going off gluten:

I had some on our January birthdays when I could eat sugar and they are really good!  I’m pretty impressed that this family has created “Jude’s Foods” to help their son who has some diet restrictions.

Check them out here.

PS A great movie to go see the Power of Families…AND how connected we are as families: "THE IMPOSSIBLE" (in theaters now) It is the TRUE story about an entire family that survived the tsunami in 2004. One of the few movies that will change your perspective on life. We truly are connected with our family members beyond what we see in the physical world.
