These puppies are packed with some pretty powerful tastiness, including coconut, rice crispies, and my always-favorite cookie ingredient: oatmeal. Oh wait, maybe coconut is my favorite. But this has both, so it’s a win-win 🙂
It’s definitely a blog-worthy recipe I realized, after someone asked in Lucy’s birthday post (her requested “birthday cake”), so here we go:
1 c. (2 cubes) butter
1 c. brown sugar
1 c. sugar
Whip together for four minutes until creamy.
1 tsp. vanilla
2 eggs
**new edit…add an extra egg yolk. Something about that makes these even better!
Mix well. Then add:
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. baking powder
**1/2 tsp. cornstarch (I think this makes these better too!)
2 c. oatmeal
1 c. coconut
1 c. chocolate chips
**you can add a chopped up milk chocolate candy bar too…we did this and it was so good!
1/2 c. chopped nuts (walnuts or pecans…but these are optional and we never add them)
Mix together.
Then hand-mix in 2 c. Rice Crispies (so they don’t get all smashed up)
Dough will be a little crumbly, and that’s ok. Place loosely on cookie sheet and bake at 375 for 7-10 minutes.
Also, if it’s someone’s birthday…especially if that “someone” thinks milk chocolate m&ms are the best thing to hit the earth, go ahead and throw those in too 🙂

We have made these twice now! The first time we forgot to add the Rice Krispies but they still turned out delicious. In fact, I didn't even realize we left them out until I saw the box of Rice Kripies in our pantry later in the day. Ha! Oh, and this recipe makes a lot of cookies! 4 dozen, at least. Thanks for a great recipe!
Can I omit the coconut? Althought I love it, my kids do not.
